- Preheat your grill to a medium-high temperature of 350–400°F.
- In a large bowl, combine paprika, chili powder, lime juice, pressed garlic, salt, pepper, olive oil, honey, and chopped green onions. Stir well until fully combined.
- Add the peeled and deveined shrimp to the marinade and toss gently to coat. Allow to marinate for about 15-30 minutes.
- Thread the marinated shrimp onto skewers, alternating with chunks of fresh pineapple and pieces of red onion.
- Drizzle the remaining marinade over the assembled skewers and sprinkle with lime zest.
- Grill the skewers for about 3–4 minutes on each side until shrimp turns pink and the pineapple caramelizes.
- Serve immediately, garnished with lime wedges and additional green onions if desired.
