For the Salmon and Vegetables
  • 4 filets Salmon Filets (skin on) Substitute with Arctic Char or Steelhead if desired.
  • 1 bulb Fennel Can replace with crunchy celery.
  • 1 medium Blood Orange Navel or Cara Cara can be used as substitutes.
  • 1 medium Lemon Meyer lemons are a sweeter alternative.
  • 1 tablespoon Fresh Thyme Dried thyme can be used in lesser quantity.
  • 1 medium Red Chile or Serrano Chile Substitute with crushed red pepper flakes.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with non-stick spray or olive oil.
  2. Whisk together honey, orange juice, lemon juice, chili powder, and a touch of cumin in a mixing bowl. Reserve some for glazing.
  3. Marinate salmon filets in the prepared marinade in a resealable bag for 20 minutes in the refrigerator.
  4. Slice the fennel, blood orange, lemon, and chili. Toss with olive oil, salt, and pepper in the baking dish.
  5. Arrange the marinated salmon skin-side down over the vegetable mix in the baking dish.
  6. Roast the salmon for about 15 to 25 minutes or until flakes easily with a fork.
  7. Remove from the oven, drizzle the reserved glaze over salmon, and garnish with fresh thyme or citrus slices if desired.
