For the Chicken
  • 1 pound Crispy Chicken Tenders can use frozen or leftover
For the Wrap
  • 4 large Flour Tortillas consider whole grain or spinach
  • 1 cup Romaine Lettuce
  • 1 cup Tomatoes diced, fresh or pico de gallo
  • 1 cup Frozen Corn or canned corn as substitute
  • 1 can Black Beans drained and rinsed
  • 1 cup Cheddar Cheese shredded
For the Dressing
  • ½ cup Mayonnaise
  • 2 tablespoons Milk
  • ¼ cup Salsa
  • 1 teaspoon Taco Seasoning
  • ½ teaspoon Cumin

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C) and bake the chicken tenders according to package instructions for about 15-20 minutes.
  2. In a medium bowl, combine mayonnaise, milk, salsa, taco seasoning, and cumin. Mix until smooth to create the southwest dressing.
  3. Heat olive oil in a skillet, add frozen corn, and sauté for about 3-5 minutes until golden.
  4. Slice the crispy chicken tenders into strips once they are done baking.
  5. Warm the tortillas, spread southwest dressing on each, and layer with chicken, lettuce, tomatoes, black beans, and corn.
  6. Roll each tortilla tightly, cut in half, and serve immediately with extra dressing on the side.
