For the Stir Fry
  • 500 grams Chicken Breast can substitute with chicken thighs
  • 1 Onion use yellow or white for best flavor
  • 1 medium Zucchini can swap with bell peppers or broccoli
  • 1 medium Bell Pepper (Capsicum) red or yellow varieties work beautifully
  • 2 medium Carrots thinly sliced for quicker cooking
  • 100 grams Cashews can substitute with peanuts
  • 2 tablespoons Sesame Oil or high smoke point oils like avocado oil
  • 1 tablespoon Cornflour (Corn Starch) not necessary if using thighs
  • 2 tablespoons Soy Sauce tamari can be used for gluten-free
  • 2 tablespoons Hoisin Sauce use extra soy sauce if hoisin isn’t available
  • 1 tablespoon Sweet Chilli Sauce optional, adjust to your preference
  • 1 tablespoon Mirin or Chinese Cooking Wine substitute with vinegar and sugar mix if needed
  • 3 cloves Garlic fresh garlic is best for flavor

Method
 

Step-by-Step Instructions
  1. Marinate Chicken: Chop chicken breast into bite-sized pieces. Combine with 1 tablespoon of soy sauce and a teaspoon of cornflour, marinate for 10 minutes.
  2. Prepare Sauce: Whisk together soy sauce, hoisin sauce, sweet chilli sauce, mirin, and minced garlic in a small bowl.
  3. Cook Onions: Heat half of the sesame oil in a wok over medium heat. Add sliced onions and sauté for 3 minutes until translucent.
  4. Add Chicken: Increase heat to high, add marinated chicken, and cook for 5 minutes until edges turn white.
  5. Add Vegetables: Stir in zucchini, bell peppers, and carrots. Cook for another 5 minutes until tender-crisp.
  6. Combine Sauce: Pour sauce mixture over stir fry, simmer on low heat for 2-3 minutes and add half of the cashews.
  7. Serve: Transfer to a serving dish, garnish with remaining cashews, and serve over warm rice or quinoa.
