- Marinate Chicken: Chop chicken breast into bite-sized pieces. Combine with 1 tablespoon of soy sauce and a teaspoon of cornflour, marinate for 10 minutes.
- Prepare Sauce: Whisk together soy sauce, hoisin sauce, sweet chilli sauce, mirin, and minced garlic in a small bowl.
- Cook Onions: Heat half of the sesame oil in a wok over medium heat. Add sliced onions and sauté for 3 minutes until translucent.
- Add Chicken: Increase heat to high, add marinated chicken, and cook for 5 minutes until edges turn white.
- Add Vegetables: Stir in zucchini, bell peppers, and carrots. Cook for another 5 minutes until tender-crisp.
- Combine Sauce: Pour sauce mixture over stir fry, simmer on low heat for 2-3 minutes and add half of the cashews.
- Serve: Transfer to a serving dish, garnish with remaining cashews, and serve over warm rice or quinoa.
