- In a large mixing bowl, combine chicken thighs with ginger, garlic, brown sugar, red curry paste, oyster sauce, soy sauce, coconut cream. Mix until coated and marinate for at least 1 hour.
- Soak wooden skewers in water for 30 minutes to prevent burning. Thread marinated chicken onto skewers and preheat the grill to medium-high heat (about 400°F).
- Oil the grill grates and place chicken skewers on the grill. Grill for 4-5 minutes per side, brushing with leftover marinade.
