Step-by-Step Instructions for Tofu and Mushroom Stir Fry
  1. In a large skillet or wok, heat 2 tablespoons of olive oil over medium heat until shimmering, about 2 minutes.
  2. Add 1 tablespoon of minced garlic to the hot oil and sauté for about 30 seconds until it becomes fragrant and slightly golden.
  3. Stir in 2 cups of thinly sliced shiitake or brown mushrooms and cook for 3-4 minutes.
  4. Introduce 1 cup of extra-firm tofu strips to the skillet, cooking until golden brown on all sides, roughly 5-6 minutes.
  5. Add 4 sliced baby bok choy halves to the skillet, stir-frying for an additional 2-3 minutes.
  6. Drizzle 1 tablespoon of soy sauce and ½ tablespoon of balsamic vinegar over the stir fry, sprinkle with ½ teaspoon ground black pepper and 1 teaspoon sesame oil, then toss to combine.
  7. Serve hot over steamed rice and garnish with 1 teaspoon of sesame seeds if desired.
