Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Clean the mushrooms with a damp paper towel and remove the stems, setting the caps aside.
  3. Heat olive oil in a skillet over medium heat, add shallots, and sauté for 5 minutes until soft.
  4. Add chopped mushroom stems and pine nuts to the skillet, toasting them for 2-3 minutes until golden.
  5. Stir in thyme, garlic, and parsley, then add breadcrumbs and cook for an additional minute.
  6. Remove from heat, add Parmesan, salt, and pepper, and mix until combined.
  7. Fill the mushroom caps with the prepared filling and top each with cubed butter.
  8. Sprinkle cheddar cheese evenly over the stuffed mushrooms.
  9. Bake for 15-20 minutes, until cheese is bubbly and tops are golden.
  10. Allow to cool for a few minutes before serving warm.
