- Preheat oven to 375°F (190°C). Fit store-bought crust in 9-inch pie dish or roll out homemade dough, prick bottom and par-bake for 10 minutes.
- Wash, peel, core, and slice apples. Toss with 1 tablespoon sugar and lemon juice, let sit for 10 minutes.
- Whisk together eggs and sugar until pale and creamy, mix in milk or cream, flour, and vanilla extract until smooth.
- Layer apple slices in cooled crust, pour custard mixture over them, filling just below the edges.
- Bake for about 50 minutes until edges are set and center jiggles slightly. Cool for 30 minutes.
- Serve warm or chilled with optional powdered sugar and whipped cream.
