  1. Preheat oven to 375°F (190°C). Fit store-bought crust in 9-inch pie dish or roll out homemade dough, prick bottom and par-bake for 10 minutes.
  2. Wash, peel, core, and slice apples. Toss with 1 tablespoon sugar and lemon juice, let sit for 10 minutes.
  3. Whisk together eggs and sugar until pale and creamy, mix in milk or cream, flour, and vanilla extract until smooth.
  4. Layer apple slices in cooled crust, pour custard mixture over them, filling just below the edges.
  5. Bake for about 50 minutes until edges are set and center jiggles slightly. Cool for 30 minutes.
  6. Serve warm or chilled with optional powdered sugar and whipped cream.
