  • 1 lb fresh or thawed shrimp the star of this dish
  • 1 medium zucchini can substitute with yellow squash
  • 1 medium yellow squash or use extra zucchini
  • 1 cup grape tomatoes or substitute with whole cherry tomatoes
  • 1 medium green bell pepper can substitute with red or yellow
  • 1 medium red onion or sweet onions, shallots work as well
  • 1 cup fresh corn frozen corn can be used
For the Seasoning
  • 2 tablespoon olive oil can use avocado oil
  • 2 cloves garlic minced; garlic powder can substitute
  • 1 tablespoon paprika or use smoked paprika for a smoky taste
  • 1 teaspoon celery seed can omit if preferred
  • 1 teaspoon dried thyme Italian seasoning can be swapped
  • ¼ teaspoon cayenne pepper omit for milder flavor
For Serving
  • ¼ cup fresh parsley for garnish; cilantro can be used as alternative
  • 1 whole lemon cut into wedges for serving

Method
 

Step-by-Step Instructions
  1. Preheat the grill to medium-high heat, about 425°F. Gather ingredients and prep foil sheets.
  2. Cut eight sheets of heavy-duty aluminum foil, 12x15 inches each. Layer two sheets per pack to prevent leaks.
  3. In a mixing bowl, combine zucchini, yellow squash, grape tomatoes, green bell pepper, red onion, fresh corn, and shrimp.
  4. Drizzle with olive oil and sprinkle in garlic, salt, paprika, celery seed, thyme, and cayenne. Toss gently to coat.
  5. Divide the mixture onto the center of each foil sheet. Fold edges to create sealed packets.
  6. Grill the packets for 12-14 minutes, flipping midway, until shrimp are opaque and veggies are tender.
  7. Remove packets with tongs. Open slowly to release steam. Serve hot, garnished with parsley and lemon wedges.
