- Preheat the grill to medium-high heat, about 425°F. Gather ingredients and prep foil sheets.
- Cut eight sheets of heavy-duty aluminum foil, 12x15 inches each. Layer two sheets per pack to prevent leaks.
- In a mixing bowl, combine zucchini, yellow squash, grape tomatoes, green bell pepper, red onion, fresh corn, and shrimp.
- Drizzle with olive oil and sprinkle in garlic, salt, paprika, celery seed, thyme, and cayenne. Toss gently to coat.
- Divide the mixture onto the center of each foil sheet. Fold edges to create sealed packets.
- Grill the packets for 12-14 minutes, flipping midway, until shrimp are opaque and veggies are tender.
- Remove packets with tongs. Open slowly to release steam. Serve hot, garnished with parsley and lemon wedges.
