Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, diced onion, bell pepper, minced garlic, shredded cheddar cheese, cooked and crumbled bacon, eggs, Worcestershire sauce, smoked paprika, salt, black pepper, and cayenne pepper. Mix gently until just combined.
  3. Transfer the meat mixture to a lined loaf pan and shape it into a loaf.
  4. In a separate bowl, whisk together the ketchup, brown sugar, apple cider vinegar, smoked paprika, and garlic powder to create the glaze.
  5. Spread half of the glaze evenly over the top of the meatloaf. Reserve the remaining glaze.
  6. Place the meatloaf in the oven and bake for 1 hour, brushing the remaining glaze halfway through.
  7. Check for doneness with a meat thermometer; it should read 160°F (70°C).
  8. Let the meatloaf rest for 10 minutes before slicing.
