Ingredients
  

For the Tacos
  • 1 pound Shrimp peeled and deveined
  • 8 tortillas Corn Tortillas warm carefully
For the Cilantro Lime Slaw
  • 2 cups Cabbage shredded
  • ½ cup Cilantro freshly chopped
  • 1 lime Lime Juice freshly squeezed
  • 1 tablespoon Honey or Agave Nectar
  • to taste Salt and Pepper adjust to taste
For the Avocado Crema
  • 1 ripe Avocado
  • ½ cup Sour Cream can substitute with yogurt
  • 1 tablespoon Lime Juice fresh is best
  • 1 teaspoon Garlic Powder
For the Spice Rub
  • 1 tablespoon Ancho Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked Paprika or regular paprika
  • to taste Salt use sparingly

Method
 

Step-by-Step Instructions
  1. Thaw frozen shrimp under cold running water for about 15 minutes. Peel and devein the shrimp, pat dry.
  2. In a medium bowl, combine ancho chili powder, garlic powder, cumin, smoked paprika, and salt. Stir together and coat shrimp with the spice rub.
  3. Preheat a skillet over medium-high heat for about 2 minutes. Add a splash of oil and cook shrimp for 3-4 minutes on each side.
  4. In a bowl, mix shredded cabbage, cilantro, lime juice, honey, salt, and pepper for the slaw.
  5. Warm corn tortillas in another skillet or wrapped in foil for about 1-2 minutes per side.
  6. Layer the cooked shrimp on each warm tortilla. Top with cilantro lime slaw, pico de gallo, and avocado crema.
  7. Serve immediately with lime wedges on the side.
