For the Chicken
  • 1 pound Chicken Thighs boneless, can substitute with chicken breasts
  • ¼ cup Soy Sauce use tamari for gluten-free option
  • 2 tablespoons Honey maple syrup can be used as vegan substitute
  • 2 tablespoons Rice Vinegar apple cider vinegar works in a pinch
  • 1 tablespoon Sriracha adjust according to spice preference
  • 1 tablespoon Cornstarch can use arrowroot for paleo option
  • 1 tablespoon Sesame Oil optional but recommended
For the Vegetables
  • 1 medium Onion can use shallots or green onions
  • 1 medium Red Bell Pepper can substitute with green or yellow
  • 1 medium Yellow Bell Pepper mix colors for variety
  • 3 cloves Garlic fresh minced is best
  • 1 tablespoon Ginger fresh grated preferred
For the Sauce
  • 2 tablespoons Olive Oil can use vegetable or sesame oil
  • ¼ cup Water to adjust sauce consistency
For Garnishing
  • 2 tablespoons Green Onions freshly chopped
  • 1 tablespoon Sesame Seeds
To Serve
  • 2 cups Cooked Rice to soak up the sauce

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Toss to coat the chicken evenly and let it marinate for 30 minutes to 2 hours in the refrigerator.
  2. While the chicken is marinating, whisk together the remaining soy sauce, honey, rice vinegar, sriracha, and water in a separate bowl. Set aside.
  3. Heat a large skillet over medium-high heat and drizzle in olive oil. Add the marinated chicken and cook for 5-7 minutes until browned on all sides. Remove the chicken from the skillet.
  4. In the same skillet, add onion, red and yellow bell peppers, garlic, and ginger. Sauté for 5-7 minutes until the vegetables are tender-crisp.
  5. Return the chicken to the skillet and pour the prepared sauce over the mixture. Stir to combine and let it simmer uncovered for 3-5 minutes.
  6. Once thickened, serve your Spicy Sweet Chicken Diablo over cooked rice, garnished with green onions and sesame seeds.
