- In a large mixing bowl, combine chicken thighs with soy sauce, honey, rice vinegar, sriracha, cornstarch, and sesame oil. Toss to coat the chicken evenly and let it marinate for 30 minutes to 2 hours in the refrigerator.
- While the chicken is marinating, whisk together the remaining soy sauce, honey, rice vinegar, sriracha, and water in a separate bowl. Set aside.
- Heat a large skillet over medium-high heat and drizzle in olive oil. Add the marinated chicken and cook for 5-7 minutes until browned on all sides. Remove the chicken from the skillet.
- In the same skillet, add onion, red and yellow bell peppers, garlic, and ginger. Sauté for 5-7 minutes until the vegetables are tender-crisp.
- Return the chicken to the skillet and pour the prepared sauce over the mixture. Stir to combine and let it simmer uncovered for 3-5 minutes.
- Once thickened, serve your Spicy Sweet Chicken Diablo over cooked rice, garnished with green onions and sesame seeds.
