Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and freeze the mozzarella for about 10 minutes.
  2. Slice the baguette diagonally into ½-inch thick pieces and lay them on a baking sheet.
  3. Drizzle olive oil over the baguette slices and gently toss to coat.
  4. Bake slices in the preheated oven for 8-9 minutes until golden.
  5. Slice chilled mozzarella into ¼-inch thick planks and cut out ghost shapes with a cookie cutter.
  6. Spread about 1 teaspoon of pesto onto each cooled crostini.
  7. Top six crostini with a slice of tomato and mozzarella, using balsamic glaze for decoration.
  8. For remaining crostini, layer with tomato and mozzarella scraps, drizzling with balsamic glaze.
  9. Serve immediately on a festive platter.
