- In a skillet over medium heat, cook the ground beef (or chicken/turkey) until browned, about 5-7 minutes. Stir in the taco seasoning and optional veggies. Cook for another 3-5 minutes until tender.
- Preheat your oven to 425°F (220°C). Roll out pie crust on a floured surface and cut out ghost shapes with cookie cutters. Place on a parchment-lined baking sheet.
- Spoon taco filling onto half of the ghost shapes, leaving a half-inch border. Sprinkle with shredded cheese.
- Top each filled ghost with another ghost shape and press edges together. Seal with a fork to prevent leaks.
- Whisk together the egg and a splash of water or milk. Brush over the tops of the assembled pies.
- Bake the hand pies in the preheated oven for 10-14 minutes until golden brown and flaky.
- Let the pies cool on the baking sheet for a few minutes, then serve warm with salsa or guacamole for dipping.
