Preparation Steps
- In a medium bowl, chop about a cup of fresh strawberries and drizzle with honey. Gently toss until well-coated and let sit for about 10 minutes.
- In a mixing bowl, blend together 8 ounces of softened cream cheese, 1 cup of powdered sugar, 1 tablespoon of lemon juice, 1 teaspoon of vanilla extract, and a pinch of salt until smooth.
- Lay out 8 slices of soft white bread on a cutting board and spread the cream cheese mixture generously on one side of each slice.
- Evenly distribute the marinated strawberries over half of the prepared slices, covering them in a single layer.
- Place the remaining slices of bread on top of the strawberry layer, cream cheese side down and press gently to secure.
- Press down lightly on each sandwich to hold together, then cut into preferred shapes such as quarters or triangles.
- Arrange the sandwiches on a platter and serve immediately or cover and refrigerate for up to 2 hours.
