  • 1 cup fresh strawberries Chopped and drizzled with honey.
  • 8 ounces cream cheese Softened.
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon honey Drizzled.
For the Bread
  • 8 slices white bread Crusts removed.
For the Garnish
  • fresh mint Optional.

Method
 

Preparation Steps
  1. In a medium bowl, chop about a cup of fresh strawberries and drizzle with honey. Gently toss until well-coated and let sit for about 10 minutes.
  2. In a mixing bowl, blend together 8 ounces of softened cream cheese, 1 cup of powdered sugar, 1 tablespoon of lemon juice, 1 teaspoon of vanilla extract, and a pinch of salt until smooth.
  3. Lay out 8 slices of soft white bread on a cutting board and spread the cream cheese mixture generously on one side of each slice.
  4. Evenly distribute the marinated strawberries over half of the prepared slices, covering them in a single layer.
  5. Place the remaining slices of bread on top of the strawberry layer, cream cheese side down and press gently to secure.
  6. Press down lightly on each sandwich to hold together, then cut into preferred shapes such as quarters or triangles.
  7. Arrange the sandwiches on a platter and serve immediately or cover and refrigerate for up to 2 hours.
