  • 4 medium Sweet Potatoes Roast until soft
For the Filling
  • 2 medium Avocado Mash for a smoother consistency
  • 1 can Black Beans Drained and rinsed
  • 1 cup Corn Substitute if desired
For the Cilantro Lime Crema
  • 1 cup Sour Cream Base of the crema
  • 2 tablespoons Lime Juice Fresh is best
  • ¼ cup Cilantro Chopped finely
Optional Toppings
  • ¼ cup Pumpkin Seeds For nutty crunch
  • 1 cup Tortilla Chips Crushed for garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Prepare a baking sheet lined with parchment paper.
  2. Place the sweet potatoes on the baking sheet and roast for 35-40 minutes until soft.
  3. Mash half of the avocado in a bowl. Add black beans and corn; mix well.
  4. Whisk together sour cream, lime juice, and cilantro in a bowl for crema. Chill for 30 mins.
  5. Slice roasted sweet potatoes in half, scoop out some flesh, and fill with avocado mixture.
  6. Drizzle cilantro lime crema over the stuffed sweet potatoes and add optional toppings.
