Ingredients
  

Crust Ingredients
  • 2 cups sugar cookie dough
  • 1 tablespoon butter melted
Filling Ingredients
  • 16 ounces cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream

Method
 

Crust Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine sugar cookie dough and melted butter.
  3. Press the mixture into the bottom of the springform pan.
  4. Bake for 10 minutes or until lightly golden.
Filling Preparation
  1. In a large bowl, beat cream cheese until smooth.
  2. Add sugar and vanilla; mix until combined.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in sour cream until smooth.
  5. Pour filling over the crust.
Baking
  1. Bake for 50-60 minutes or until the center is set.
  2. Turn off the oven and let the cheesecake cool inside with the door ajar for 30 minutes.
  3. Refrigerate for at least 4 hours before serving.
