  • 2 tablespoons olive oil extra virgin preferred
  • 4 cloves garlic smashed, fresh
  • 1 bunch fresh basil chopped, for serving
  • 1 teaspoon crushed red pepper adjust to taste
  • 2 tablespoons tomato paste
  • 28 ounces crushed canned tomatoes the base of the sauce
  • 1 can whole canned tomatoes broken up slightly
  • 1 teaspoon salt to taste

Method
 

Step-by-Step Instructions
  1. In a large saucepan, heat olive oil over medium heat until it shimmers. Add smashed garlic and sauté for 30 seconds.
  2. Stir in tomato paste and crushed red pepper flakes. Cook for about 5 minutes.
  3. Add crushed tomatoes and whole tomatoes, breaking them up slightly. Bring to a simmer.
  4. Reduce heat to low and simmer uncovered for at least 30 minutes, stirring occasionally.
  5. Taste and season with salt. Stir gently and adjust seasoning.
  6. Just before serving, add fresh chopped basil and stir through the sauce.
