Method
 

Preparation
  1. Preheat your oven to 475°F (245°C) and adjust the oven rack to the middle position.
  2. In a large pot, combine the freshly sliced peaches, sugar, flour, and nutmeg. Let sit for about 10 minutes.
  3. Bring the mixture to a boil over medium-high heat, then reduce to simmer for approximately 10 minutes.
  4. Stir in the butter and vanilla extract until melted.
Assembly
  1. Spoon half of the peach mixture into a greased baking dish.
  2. Roll out your pie crusts on a floured surface and cut into strips.
  3. Layer half of the crust strips over the peach layer and bake for 20 minutes.
  4. After baking, add remaining peach mixture and crust strips, brushing with egg wash.
  5. Bake for an additional 15 minutes until golden brown.
  6. Allow to cool for about 10 minutes before serving.
