Preparation
- Preheat your oven to 475°F (245°C) and adjust the oven rack to the middle position.
- In a large pot, combine the freshly sliced peaches, sugar, flour, and nutmeg. Let sit for about 10 minutes.
- Bring the mixture to a boil over medium-high heat, then reduce to simmer for approximately 10 minutes.
- Stir in the butter and vanilla extract until melted.
Assembly
- Spoon half of the peach mixture into a greased baking dish.
- Roll out your pie crusts on a floured surface and cut into strips.
- Layer half of the crust strips over the peach layer and bake for 20 minutes.
- After baking, add remaining peach mixture and crust strips, brushing with egg wash.
- Bake for an additional 15 minutes until golden brown.
- Allow to cool for about 10 minutes before serving.
