Preparation
  1. In a large mixing bowl, combine the ground beef or pork with breadcrumbs, egg, and soy sauce. Mix thoroughly to create a uniform texture and shape into small meatballs, about one inch in diameter.
  2. Preheat your oven to 375°F (190°C) and bake the meatballs for 20-25 minutes until browned and cooked through.
  3. While the meatballs are baking, whisk together ketchup, brown sugar, apple cider vinegar, and pineapple juice in a medium saucepan. Heat until it simmers and sugar is dissolved, about 5 minutes.
  4. Assemble the kabobs by threading the cooked meatballs, bell peppers, and onions onto soaked wooden skewers, alternating ingredients.
  5. Brush the assembled kabobs generously with the sweet and sour sauce.
  6. Preheat the grill or broiler to medium-high heat and cook the kabobs for 5-7 minutes on each side, basting with extra sauce.
