Preparation
- In a large mixing bowl, combine the ground beef or pork with breadcrumbs, egg, and soy sauce. Mix thoroughly to create a uniform texture and shape into small meatballs, about one inch in diameter.
- Preheat your oven to 375°F (190°C) and bake the meatballs for 20-25 minutes until browned and cooked through.
- While the meatballs are baking, whisk together ketchup, brown sugar, apple cider vinegar, and pineapple juice in a medium saucepan. Heat until it simmers and sugar is dissolved, about 5 minutes.
- Assemble the kabobs by threading the cooked meatballs, bell peppers, and onions onto soaked wooden skewers, alternating ingredients.
- Brush the assembled kabobs generously with the sweet and sour sauce.
- Preheat the grill or broiler to medium-high heat and cook the kabobs for 5-7 minutes on each side, basting with extra sauce.
- Remove the kabobs from the grill after cooking and let them rest for a few minutes before serving.

Notes
Keep meatballs uniform in size for even cooking. Soak skewers in water to prevent burning. Adjust sauce to taste before assembly.
