  • 2 cups Cooked Quinoa or Rice brown rice or farro can be used
  • 1 cup Roasted Corn canned corn, rinse before use

Method
 

Step-by-Step Instructions
  1. Peel and chop 2 large sweet potatoes into chunks. Boil in salted water for 15–20 minutes until fork-tender. Drain and cool slightly before mashing.
  2. Add 1 cup of flour and ½ cup of chopped almonds to mashed sweet potatoes. Season and mix until a cohesive batter forms.
  3. Form patties from the fritter mixture and place on a baking sheet lined with parchment paper.
  4. Heat ¼ cup of olive oil in a skillet. Fry the fritters for 5 minutes on each side until golden brown.
  5. Blend 1 cup of yogurt, 1 chopped jalapeño, 2 tablespoons of fresh dill, and salt in a blender to make the jalapeño ranch.
  6. Assemble bowls with spinach, quinoa or rice, roasted corn, diced tomatoes, and fritters topped with jalapeño ranch.
  7. Serve immediately and enjoy the vibrant flavors of the bowls.
