  • 4 slices sturdy bread sourdough or whole wheat
For the Blueberry Compote
  • 1 cup blueberries fresh or frozen
  • 2 tablespoons sugar substitute with honey or maple syrup if desired
  • 1 tablespoon lemon juice freshly squeezed
  • lemon thyme optional
For the Cheese
  • 1 cup shredded white cheddar medium to sharp
  • 1 cup shredded mozzarella whole milk for gooey texture
For Frying
  • 1 tablespoon unsalted butter

Method
 

Directions
  1. Combine blueberries, sugar, lemon juice, and lemon thyme in a medium saucepan. Bring to a gentle boil, reduce heat and simmer for 20 minutes until thickened.
  2. Spread cooled blueberry compote on two slices of bread. Top with shredded cheese, cover with remaining slices.
  3. Melt butter in a skillet over medium-low heat. Grill sandwiches for 2-3 minutes on each side until golden brown and cheese melts.
  4. Allow sandwiches to cool slightly, then cut in half and sprinkle with sea salt and fresh thyme if desired.
