Preparation
- Preheat your oven to 350°F (175°C) and prepare an 8.5x4.5 inch loaf pan by greasing it generously and lining the bottom with parchment paper.
- In a large mixing bowl, whisk together granulated sugar and dark brown sugar until combined. Slowly drizzle in the oil while whisking.
- In a separate bowl, sift together all-purpose flour, baking powder, baking soda, ground cinnamon, all spice, nutmeg, cloves, and salt.
- Gradually fold half of the dry ingredients into the wet mixture, then add sour cream and vanilla extract and mix until smooth.
- Gently fold in the grated carrots.
- Pour the batter into the prepared loaf pan and bake for 65-75 minutes, or until a toothpick inserted comes out clean.
- Once baked, cool the loaf in the pan for 10 minutes before transferring to a wire rack.
- For the frosting, beat unsalted butter until fluffy, then add cream cheese and mix until smooth. Gradually incorporate powdered sugar and vanilla extract.
- Once cooled, frost the loaf and garnish as desired.
