  • 1 can Cooked Chickpeas (drained and rinsed) Use canned for convenience or cook from dry
  • 1 cup Mixed Yellow and Red Grape Tomatoes (halved) Substituting with cherry tomatoes is acceptable
  • 1 medium English Cucumber (diced) Persian cucumbers can be used as a substitute
  • ¼ cup Pickled Red Onions Red onion can be used raw if pickled is unavailable
  • ½ cup Kalamata Olives (pitted and halved) Use green olives for a different flavor
  • ¼ cup Chopped Fresh Parsley Can substitute with cilantro
  • 2 tablespoons Chopped Fresh Dill Can replace with fresh basil
  • 2 tablespoons Chopped Fresh Mint Omit if not available, but ideal for garnish

Preparation
  1. In a large mixing bowl, whisk together the dressing ingredients until emulsified and creamy.
  2. Add chickpeas, tomatoes, cucumber, red onions, and olives to the bowl, and gently toss until coated in dressing.
  3. Incorporate the fresh herbs and toss gently until evenly distributed.
  4. Adjust seasoning as needed and let the salad chill in the fridge for about 30 minutes before serving.
  5. Garnish with whole mint leaves before serving.
