Steps
  1. In a large pot, heat olive oil over medium heat. Add sliced garlic and sauté for 2-3 minutes until fragrant but not browned.
  2. Sprinkle in smoked paprika and add torn stale bread, sautéing for another 3 minutes.
  3. Pour in chicken stock or vegetable broth, breaking up bread gently; allow to simmer for about 10 minutes.
  4. Stir the broth to create a whirlpool effect and slowly drizzle in whisked eggs, stirring continuously.
  5. Taste the soup and season it with sea salt and black pepper. Adjust consistency by adding more broth if too thick.
  6. Ladle the soup into bowls, garnish with olive oil and chopped parsley if desired.
