  2. In the same skillet, add chopped onion, bell peppers, and minced garlic. Sauté for 4–5 minutes until softened. Sprinkle in additional Cajun seasoning.
  3. Stir in uncooked rice and sauté for 1–2 minutes, allowing rice to absorb flavors from the skillet.
  4. Pour in chicken broth and bring to a simmer. Return seared chicken to the skillet, cover, and cook for 20–25 minutes until rice is tender.
  5. Fluff the rice with a fork, garnish with parsley or green onions, and squeeze lemon juice if desired. Serve hot!
