Method
 

Preparation Steps
  1. Wash and trim the fresh beets, remove long roots, and boil in water for 40 minutes or until fork-tender.
  2. Let the beets cool briefly, then peel off the skins and slice into rounds or cubes.
  3. Combine equal parts vinegar and water in a saucepan, adding sugar and salt. Heat, stirring until dissolved.
  4. Add spices to the warm brine and simmer for an additional 5 minutes.
  5. Sterilize jars, layer sliced beets, and pour hot brine over, ensuring they are submerged.
  6. Seal jars with lids while hot, cool for an hour, then refrigerate and let marinate for at least 24 hours.
