Method
 

Step‑by‑Step Instructions
  1. In a medium bowl, whisk together ¼ cup of extra virgin olive oil, 2 tablespoons of champagne vinegar, 2 minced garlic cloves, 1 teaspoon of Dijon mustard, and 1 diced shallot. Season with salt and black pepper to taste.
  2. Place 2 thinly-sliced chicken breasts in a shallow dish and pour half of the prepared dressing over them. Cover and let marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill to 400°F (200°C). Grill the marinated chicken breasts for about 5-6 minutes on each side until the internal temperature reaches 165°F (74°C).
  4. On a serving platter, create a base with mixed greens and arugula. Top with sliced strawberries, diced avocado, and sliced grilled chicken. Crumble feta cheese over the top.
  5. Drizzle the remaining dressing over the salad just before serving, and toss gently if desired.
